Minecraft only updates chunks around the player, so when a pig steals a minecart from the rail depot, he hits the border of the loaded areas and stops. Recent patches have made it possible to retain momentum upon hitting the border, so when I flew over later in creative mode, I was surprised to see the pig still riding the rail.
Also, the penalty for stealing a cart... is death!
